Matter moves against the pull of gravity during "evaporation and transpiration." Evaporation is the process when the sun heats water to it's boiling point then turns the water from a liquid to a gas. Transpiration is the process plants use to get their water. They use small pores in their leafs to suck their water up their roots to help them grow.
